Smoking — The art of slow cooking in a chamber
various meats and poultry items that have been marinated in dry
ingredients allowing the flavors to penetrate into the food by
smoke versus flame. The perfect smoked meats have a reddish ribbon
or ring of smoke on the interior of the meat.
What Is Dry Rubbing — It is adding a mixture
of spices, we can’t tell which ones, that break down the fibers
of the meat and poultry allowing it to become seasoned. The rub
works as a protective layer for the meat and poultry and creates
a crust that protects the moisture inside the food.
Holy Sauces — Our sauces are made from the
freshest ingredients to accompany our dry rubbed meats. The House
Sauce is designed for chicken and beef products and the pig sauce
is designed for pork products. However, you can choose your own
sauce for any product.
Homemade Pickles — Our Pickle chips are
made with fresh Cucumbers, garlic, white vinegar, and our special
house seasonings.
